Soup is one of the best foods to warm you on a cold day, and this Moroccan Harira soup is a particularly good option. Filled with chickpeas, lentils, and spices in a delicious tomato broth (and prepared in a crock pot!) this soup is the perfect welcome home. credit: Laura Carrollif
}Ingredients:The super basics, if youre super broke1 cup of dried chickpeas1 cup of dried lentils3-4 fresh tomatoes OR 1 can of diced tomatoes1 small onion1 container of vegetable broth, or one cube of vegetable bouillon2 tablespoons of Ras El Hanout or other Moroccan spice blendcredit: Laura CarrollOptional Ingredients:The slightly fancier stuff, if you have a few extra bucks1 lemon? cup olive oil (extra virgin olive oil is the tastiest)? cup Greek yogurt or sour creamSupplies:1 Crock Pot/ Slow Cooker1 grater (optional)Serves four, but can easily be scaled. If you make extra, stick it in the freezer for a future meal! Let's do this thingPeel and dice the onion, wash and dice the tomatoes if you're using fresh. Place all of the basic ingredients into the slow cooker, and add water until the machine is close to being full. Cook on low for 6-8 hours. Your soup will be magically done when you get home! You can also make this soup on the stovetop, of course. If you do this, you'll need to use canned or pre-cooked chickpeas, rather than dried chickpeas. Place all of the basic ingredients into the pot, and add water until it's close to full. Once you bring all of the basic ingredients + water to a boil on the stovetop, simmer the soup for at least half an hour so that the lentils cook through and the flavors blend. Finish the soup with the fun stuffIf you're using the lemon and olive oil, this is the moment they become relevant. Zest the lemon using a grater, or using a vegetable peeler and then finely chopping the peeled lemon skin. Cut the lemon into quarters and remove the seeds. Squeeze the lemon juice into the soup, add the zest, and pour in the olive oil. Give everything a stir so that the flavors blend. Dish up the soup into individual bowls, and add a drizzle of olive oil or a dollop of sour cream or Greek yogurt. Enjoy!
